At the suggestion of the very friendly bartender/waiter Jeb, my dinner had a wonderful starter of Baja Shrimp Ceviche. The fresh jalapenos really made this pop with just enough spice to enhance the shrimp flavor. I chose the Snake River Farms Kobe Beef Burger topped with pepper jack cheese and side salad as an entree. If ever an elegant cheeseburger existed, this is the one! Served up on a whole wheat bun, I really expected to take half of the burger home, but it was so delicious I just had to eat the whole thing.
My husband thoroughly enjoyed the Ancho Chile Crusted "Baseball" Sirloin Steak. The sea salt baked new potatoes and bacon wrapped greens were an excellent touch on the side. While my oldest daughter also chose the steak, my youngest had the cheese pizza from the kid's menu. The crust was heavenly!
Even though we were full from the main course, dessert was irresistible. For the kids, the favorite was the vanilla ice cream with warm chocolate sauce, topped with fresh mint leaves. I, of course, had to have the Decadent Chocolate Marquise Duo Chocolate Mousse. It was topped with toasted hazelnuts and a chocolate "leaf," with mint and fresh berries on the side.
The Hotel Telluride is located on the west side of Telluride, where there seems to be a shortage of restaurants. The Bistro is in an excellent location with a quiet, friendly neighborhood feel. Hotel Telluride guests are treated to a complimentary breakfast buffet, and later in the day, the bar has an extensive wine list and many choices of imported and domestic beers. The friendly staff and delicious food certainly make this another excellent choice for dining in Telluride.
